Natur Tanya Fermented Black Garlic is a food supplement in capsule form containing a concentrated extract of fermented black garlic. The extract is made from processed bulbs of Allium sativum L. and is standardised for S-allylcysteine (SAC).

Standardisation indicates the amount of a characteristic constituent in relation to the extract's total weight, providing more information about its contents than weight alone.

From garlic to black garlic

Black garlic is produced by ageing garlic at a controlled temperature and humidity. During the process, the garlic's colour, texture and chemical composition change. Food research shows that processing temperature affects both the intensity of browning and the sensory properties.

Composition changes during ageing

Studies on garlic have shown a decrease in allicin during heat treatment, as well as changes in sugars, acids and phenolic compounds. The final composition depends on temperature and humidity together, rather than on ageing time alone.

The significance of S-allylcysteine

S-allylcysteine, abbreviated as SAC, is a sulphur-containing constituent studied in black garlic. Research shows that its content varies with processing conditions; longer or more intensive heat treatment does not automatically result in a higher SAC content. Standardisation therefore provides useful information about the composition in addition to the extract's weight.

Colour and composition are different properties

A darker colour does not in itself indicate the SAC content of a black garlic ingredient. Measured composition is therefore important alongside appearance when describing the ingredient.

Capsule shell

The extract is enclosed in an HPMC (hydroxypropyl methylcellulose) capsule shell, which is a plant-based material. Capsules with lower moisture content are also used for moisture-sensitive ingredients.
